Frothed milk is delicious, and it creates the base for latte art. This guide will teach you how to properly froth milk with a steam wand.

STEP 1

Pour the amount of fresh, cold milk you need into a clean pitcher.

Remember: Frothing increases the milk’s volume. Not all milks will froth equally. Dairy-based milks froth well, but plant-based dairy alternatives might not froth, as they're made with water.

STEP 2

Submerge the tip of the steam wand into the milk, open the steam wand all the way, and slowly lower the pitcher until you hear a paper tearing sound.

Aerate milk 1–3 seconds for a latte, or 6–8 seconds for a cappuccino. Aerating the milk simply means adding air into the milk, which gives you a velvety smooth final froth.

A whirlpool will form while the milk is steaming, making creamy, dense foam.

If you have one, you can use a thermometer to ensure the milk is reaching the recommended temperature of 70°C

Groom the milk by gently tapping the pitcher on your counter top, and give it a few gentle swirls.

This creates a shiny, smooth texture throughout. The goal is to see no bubbles after steaming.

STEP 5

Always sanitise the steam wand after steaming milk. Blow steam through the wand for 2 seconds onto the clean kitchen towel, and wipe off any remaining milk froth.

Keep your hand above the wand to avoid burns.
